Today was our HR Department’s Pancake Breakfast. Social fun on a dreary rainy morning. Brian brought his own special low-fat protein-enriched recipe to share. Folks loved it!
Brian’s Pancakes
1 cup oatmeal
1 cup fat-free cottage cheese
1 cup egg whites
2 scoops protein powder
Almond milk (optional, to thin batter)
Blend into the consistency of batter.
Makes about 20 four inch pancakes.
Nutritional info based on 4 servings per batch using Muscle Milk protein powder.
* Muscle Milk is a little high in fat content. Normal protein powder would likely cut the fat down to just 3-4 grams or so.

Fat – 9.4 g.
Carbohydrate – 22 g.
Protein – 25.5 g.
Sodium – 425 mg.
